Mandu is in Malwa, a region known for filling vegetarian food built on wheat, corn, lentils and ghee. The town is small, so meals are simple and local, from poha jalebi at breakfast to a plate of dal bafla at lunch.
Mandu also has a food you will not find in most of India: the sour fruit of its baobab trees, sold here as khurasani imli. Cooking has a long history here too, as the Ni'matnama, an illustrated book of recipes, was made at the court of the Mandu sultans around 1500.

Malwa food is hearty and mostly vegetarian. Try these dishes during your visit.
Dal Bafla
Balls of wheat dough that are boiled, then baked until crisp outside, and served soaked in ghee with spiced dal. It is the signature meal of Malwa and makes a filling lunch between monuments.
Malwa Thali
A full plate of bafla or roti, dal, kadhi, a seasonal vegetable, rice and a sweet. It is the easiest way to try several Malwa dishes in one sitting.
Poha Jalebi
Flattened rice cooked with onion, turmeric and mild spices, topped with crunchy sev and eaten with hot, syrupy jalebi. It is the classic breakfast of Madhya Pradesh and is best early in the day.
Bhutte Ka Kees
Grated corn cooked with ghee, milk and mild spices, and finished with coconut and coriander. It is a much-loved Malwa snack, especially in the monsoon, when fresh corn is in season.
Mandu Imli (Khurasani Imli)
The fruit of Mandu's baobab trees. The dry white pulp inside the hard pod is sour, and is eaten as it is or turned into sherbet, candy and other sweets. You will see it sold at stalls near the monuments.
Most snacks come from small stalls around the village centre, the bus stand and the road to the Royal Enclave. A glass of tea with a plate of poha makes an easy start to the day. Between monuments, a cone of baobab pulp or a cold baobab sherbet is a good break in the heat. For restaurants, see where to eat in Mandu.
Questions
Mandu is known for Malwa dishes such as dal bafla, poha jalebi, bhutte ka kees and the Malwa thali, and for khurasani imli, the sour fruit of its baobab trees.
Khurasani imli is the local name for the fruit of the baobab tree, which grows across Mandu. The dry white pulp inside the pod tastes sour and is eaten as it is or made into sherbet and sweets. It is sold at stalls near the monuments.
Both are wheat dough balls eaten with dal. Bati is baked, while bafla is boiled first and then baked, which makes it softer inside. Dal bafla is the Malwa favourite and is usually served soaked in ghee.
Poha jalebi is the classic breakfast: spiced flattened rice topped with sev, eaten with hot jalebi. Small stalls in the village serve it in the morning.
