Goan Fish Curry
Fish cooked in a coconut and tamarind gravy, eaten with rice. Locals call it xitt kodi (rice and curry), and for many families it is lunch every day.
Pork Vindaloo
Pork marinated in vinegar, garlic and red chillies, then slow-cooked. The name comes from a Portuguese dish of meat in wine and garlic, and the Goan version is sharp, hot and deep red.
Chicken Cafreal
Chicken coated in a green paste of coriander, green chillies and spices, then fried or roasted. It is often served with potato wedges or bread.
Prawn Balchão
Prawns cooked in a spicy, tangy red masala with vinegar, a little like a pickle. It is strong in flavour, so eat it with rice or bread.
Bebinca
Goa's best-known sweet: a layered pudding of coconut milk, eggs, sugar and ghee, baked one layer at a time. It is made for Christmas and weddings but sold all year.
From about October to May, beach shacks open along most beaches and serve fresh seafood, Goan curries and snacks by the sea. Inland villages such as Assagao and the lanes of Panaji have cafés and family-run restaurants that are good for a slower lunch.
