The Adi plate

A traditional Adi meal is rice with a boiled dish of greens and vegetables, something smoked or grilled, and a sharp chilli chutney. Food is cooked with very little oil, and many dishes are simply boiled with herbs, ginger and chilli. Rice is sometimes cooked wrapped in leaves. The Adi thali on local menus is a version of this spread.

Dishes to look for

  • Fish from the Siang — grilled, smoked or cooked in bamboo with herbs. Fresh river fish is Pasighat's pride.
  • Smoked meat — pork or other meats hung over the kitchen fire, then cooked with bamboo shoot or greens.
  • Bamboo shoot curry — fresh or fermented bamboo shoot, sour and pungent, cooked with chilli.
  • Momos — easy to find in town cafés.
  • Apong — Adi rice beer, often served in bamboo cups. It is central to hospitality and festivals.

Fruit

The Pasighat area grows oranges, and in winter they fill the market. Bananas, pineapples and local citrus appear through the year.

For vegetarians

Boiled greens, bamboo shoot dishes, dal and rice are easy to find. Ask about meat or fish in stocks and chutneys, which is common.

Eating in villages and at festivals

At Solung or Aran, you may be offered food and apong. It is polite to accept a little, and fine to say no to alcohol. Homestays are the best place to try real Adi food.
