Jonna rotte and gongura

Jonna rotte is a thin flatbread of sorghum flour, patted by hand and cooked on a griddle. It is the everyday bread of rural Telangana and eaten at lunch with a curry and a chutney. The classic partner is gongura pachadi. This chutney is made from the sour leaves of the sorrel plant, ground with red chillies and garlic and finished with a tempering. It is tangy, hot and addictive with rice too. Telangana meals restaurants such as Telangana Ruchulu serve both.

Sarva pindi

Sarva pindi is the region's own snack. Rice flour is mixed with chana dal, peanuts, green chilli and curry leaves, pressed thin into a pan and roasted until crisp at the edges. It is eaten at breakfast or teatime and is found at tiffin places such as Sri Tiffins in Hanamkonda. It is filling, so one is often enough for two.

Mirchi bajji

Long green chillies are slit, stuffed, dipped in gram-flour batter and deep-fried. The best ones come from roadside carts in the evening, topped with chopped onion and lime. They are hot, but the batter softens the heat. Ask for a milder chilli if you are unsure.

Biryani, Telangana style

Hyderabadi-style dum biryani is on every menu in Warangal. It is usually a little spicier and cheaper than in the capital, and it comes with salan and raita. Hotel Kanha in Hanamkonda is a popular stop, and there is a restaurant near Ramappa for the day trip.

Tips

  • Lunch is the main meal. Telangana thalis refill rice and curries until you stop them.
  • Say karam takkuva (less spicy) if you need milder food.
  • Most thalis are vegetarian, and the non-veg curries are added separately.
