What pav bhaji is
Mashed mixed vegetables — potato, cauliflower, peas, tomato, capsicum — cooked on a flat griddle with butter and pav bhaji masala until it is a thick spiced mash, served with soft bread rolls fried in more butter, plus raw onion, lemon and coriander on the side.
⚠️ It is not Rajasthani
Pav bhaji comes from Mumbai, where it began as a cheap lunch for textile mill workers. It is now eaten everywhere in India including Jaipur, and it has Jaipur institutions — but if you came to Rajasthan to eat Rajasthani food, this is not it. For that go to Spice Court, Niros or Chokhi Dhani.
🍞 Ordering it well
Watch it being made on the griddle. Pav bhaji is cooked to order and the griddle work is the point. A portion that arrives from a pre-made pot is inferior.
Ask for less butter if you want it. The default is a lot of butter, on both the bhaji and the pav. 'Kam makkhan' gets you less.
Squeeze the lemon and eat the raw onion. They cut through the richness and are not optional garnishes.
Order one portion to share first. It is dense and filling.
