The story
Why is Missi Roti famous in Jaipur?
A farm and household bread rather than a restaurant invention. Besan stretches scarce wheat, the onion and chilli make it a meal on its own, and the ajwain is there for digestion. Across Rajasthan it is eaten with ghee and a side of white butter or lehsun chutney.

What it is
A thick flatbread of gram flour and wheat flour with finely chopped onion, green chilli, coriander, ajwain and salt in the dough, rolled, cooked on a griddle and brushed with ghee.
π₯ Ordering it well
It replaces plain roti, it does not accompany it. Missi roti is more filling. One or two is usually enough alongside a curry.
Ask for it off the tawa, not from the tandoor. The tawa version stays softer and the onion cooks through; tandoor versions dry out faster.
Say no to ghee if you want it lighter. The default is generous ghee. 'Bina ghee' gets you a plain one.
It is the right bread for laal maas and gatte ki sabzi. The besan in the dough stands up to a thick spicy gravy better than a plain wheat roti does.
π Where to eat it
- Any Rajasthani thali in Jaipur includes it β Chokhi Dhani, LMB, Spice Court, Suvarna Mahal
- Handi and Niros on MI Road serve it alongside their meat curries
- Masala Chowk in Ram Niwas Garden has stalls cooking it to order at street prices
If a kitchen only offers plain roti, that is a sign it is not cooking Rajasthani food seriously.
