Eat well, then shoot nearby in Agra.

Fatehpur Sikri
Early morning, before the tour coaches arrive, when the light on the sandstone is soft and the courtyards are empty; late afternoon for warm light on the palace pavilions.
Fuel up on Mughlai Korma, then shoot Fatehpur Sikri.

Agra Fort
Late afternoon, when the red sandstone warms to orange and the Taj glows down the river; early morning for soft light and empty courtyards.
Fuel up on Mughlai Korma, then shoot Agra Fort.

6:00–7:30 AM for empty courtyards, low raking light on the red sandstone, and deer on the lawns. Late afternoon gives warm stone but more visitors. Avoid 10:00 AM – 3:00 PM: harsh overhead light, heat haze, and the sandstone goes flat.
Fuel up on Mughlai Korma, then shoot Akbar's Tomb, Sikandra.

Mughlai Korma
Agra was the Mughal capital for a generation, and korma is the dish that survived it. It is meat — usually lamb or chicken, sometimes goat — braised slowly in yoghurt, cream and ground nuts with warm aromatic spices until the sauce is thick, pale and silky rather than red and fiery. The technique is dum: a sealed pot, low heat, long time.
What makes it Mughlai rather than just a curry
The flavour base is not onion-tomato-chilli, which is what most north Indian restaurant gravy is built on. Korma's base is yoghurt, cream, almond or cashew paste, and saffron, with cardamom, mace, white pepper, cloves and rose water rather than red chilli. It is therefore aromatic and mild, not hot — a fact that surprises people who order it expecting heat. The richness is the point. If a korma arrives red and burning, it is not a korma.
Where to eat it in Agra
- Peshawri at ITC Mughal, Tajganj — the North-West Frontier version, cooked in a tandoor-led kitchen. Their Dal Bukhara (black lentils, cooked overnight) and raan are the institutions; korma is on the menu and serious.
- Esphahan at The Oberoi Amarvilas, Taj East Gate Road — the royal thali and the most refined Mughlai cooking in the city, with live traditional music and, in some rooms, a view of the Taj. Expect ₹5,000+ for two.
- Pinch of Spice, 1076/2 Fatehabad Road — the reliable mid-range answer, with outlets in Tajganj and Civil Lines. Mughlai korma and a kebab platter at ₹500–1,000 for two.
- Mama Chicken Mama Franky House, Sadar Bazaar — the budget, street-level version. Not a fine-dining korma, but real Mughlai cooking at ₹150–500.
- Taj Bano at ITC Mughal and Jahanpanah — both consistently recommended for Mughlai.
What to order with it
Korma needs bread, not rice: sheermal (a slightly sweet saffron flatbread, the classic Mughal pairing), roomali roti, or a butter naan. Peshawri's giant naan is worth ordering on its own. Add a raita to cut the richness.
The vegetarian version
Navratan korma and paneer korma use the same technique with vegetables and paneer, and are just as good. Agra is not a vegetarian city the way Jaipur is — Mughlai meat cooking is the local tradition — but every Mughlai restaurant here has a serious vegetarian korma, and Dasaprakash on Taj Road does excellent South Indian vegetarian food if you would rather avoid Mughlai entirely.
